baked veg with sumac and cumin seeds

I usually wait for winter to do these dinners but was feeling lazy, so chopped up a few vegetables and opened the spice box to add some flavour. Cumin seeds and sumac are an excellent new discovery to bake with.

Method

preheat oven to 180 degrees celsius
mix all vegetables together and place in a large baking tray
sprinkle over all the herbs and seeds and mix through
stir through the dash of vinegar and oils
bake till golden brown - about 20 mins
serve with fresh parsley

Ingredients

  • 4 new potatoes roughly chopped
  • 2 zucchinis chopped into bite size pieces
  • 2 small fennel bulbs roughly chopped
  • 1 small onion roughly chopped
  • 3 garlic cloves peeled and chopped
  • dash of red wine vinegar
  • dash of peanut oil
  • dash of olive oil
  • small handful of cumin seeds
  • half small handful of caraway seeds
  • small handful of sumac
  • fresh parsley to serve
