Stuffed Zucchini Flowers

I'm sure this dish was invented in Italy by people with small hands, its finicky but well worth the effort.

Method

wash the flowers and mix all the other ingredients together to make the stuffing, gently stuff the flowers with the stuffing, use a small spoon to spoon it in, be careful not to break the flowers

heat an over to 180 degrees and bake for about 20mins, serve warm or cold

Ingredients

  • zucchini flowers
  • 100gm ricotta
  • 50gm shaved parmesan
  • black olive paste (from any supermarket)
  • fresh garlic
  • flat leaf parsley - hand full
  • zest of small lime
  • pinch salt and pepper
  • olive oil for baking
