Words cannot describe the deliciousness of this dish, if you are not a fan of the mussel you will be after this. Baking them is the way forward

Method

line a baking tray with baking paper and place the mussels on the paper
pre heat oven to 180 degrees
mix all ingredients together and pour over the mussels
bake for 20 mins and serve immediately

Ingredients

  • kilo of green lipped mussels
  • tblspoon green curry past
  • 2 kafir lime leaves finely sliced
  • coriander stems chopped
  • coriander leaves for garnish
  • 200 mls of coconut milk
