Deep fried pea and quinoa balls

The crunchy nature of quinoa makes for a beautiful popping mouthy moment.

Method

cook the quinoa first and let sit to cool
cook the polenta and mix it with the frozen peas straight away then mix through with the cooled quinoa and raw garlic
make the mixture into bite size balls then dust with flour, dip in egg and cover with bread crumbs
deep fry for about a minute each in the hot oil

Ingredients

  • frozen peas
  • 100gm minute polenta
  • 200gm quinoa
  • garlic
  • flour
  • eggs
  • bread crumbs
  • peanut oil for frying

I would use half rice and half quinoa next time, maybe brown rice as they were really hard to handle
