Baked eggplant with Dutch carrots and leeks

when you are tired, don't cook anything but bake everything
Method
slice the leek and lay in the bottom of baking dish, chop up the zucchinis and mix it around with the leek
place the carrots whole on top
slice the eggplant and salt it for 10 mins before washing with water
place the eggplant in a layer over the top and cover with oil and the herbs and anchovies
bake for about 30 mins at 200
for the dressing place all in a blender and pulse

- bunch Dutch carrots
- one big leek
- one eggplant
- 3 x zucchinis
- 8 anchovies
- oil
- thyme
- rosemary
- for dressing
- handful dill
- handful parsley
- olive oil
