udon in the nude

felt like udon, remembered some Asian flavours, made it, loved it

Method

fry onion and coriander stalks chopped in a deep pot for about 5 mins, add the garlic chopped and keep stirring. When it all starts to soften add in the tempeh cut into small bite sized pieces with the shrimp paste and the dark soy. Fry for a while until the tempeh is coated in a nice crispy covering. Add in all the rest of the ingredients (except cabbage and spinach) and cover with water and a lid, leave to simmer.
boil the udon in water until nice and soft
as the udon is softening put the cabbage and the spinach into the other pot
when ready put udon in bowl and then ladel the soup over it, garnish with coriander

  • big onion sliced
  • pkt tempeh
  • pkt organic udon noodles
  • 3 cloves fresh Russian garlic
  • 1 bunch coriander
  • 2 massive spoons taiwanese soy bean paste
  • 1 small spoon shrimp paste
  • 1 dollop black soy sauce
  • 1 big splash light soy sauce
  • 1 small splash fish sauce
  • bunch chinese spinach
  • 1/4 bunch red cabbage
