Eton Mess

Traditionally served at Eton College, this is a super easy dessert that looks disgusting but tastes divine

Method

Preheat your oven to ~160 degrees C.

In a clean bowl, beat the egg whites into firm peaks, adding a cup of sugar slowly so the sugar dissolves. On a tray lined with baking paper, spoon the meringue into dollops, perhaps the size of a teacup.

Place the tray in the oven and cook the meringue. The idea is you want them to form a nice slightly browned crust on the outside and still be a bit squishy on the inside. This will probably take about 20 mins to half an hour at this temperature. I used a fairly low temperature as they can burn very quickly. Once done, remove from the baking paper and smash in to small pieces.

In a separate bowl, beat the cream and the rest of the sugar until it thickens.

Either in a large glass bowl or individual glasses or ramekins, spoon in layers of cream, berries and meringue, and get messy!

Ingredients

  • 6 egg whites
  • 1 1/4 cups sugar
  • 1 large tub thickened cream
  • mixed berries or other yummy fruits in season (strawberries, raspberries, blueberries, mango, passionfruit etc. etc.)
