Super Awesomeness Vegetable Stack
I love this is as it a really easy vegetable / or can add meat dish and you can make it look like a 5* restaurant and impress guests. Lovely Mediterranean flavours and lots of herbs and olive oil.
Method
Slice vegetables about 5mm thickness, toss in olive oil, salt, cracked pepper and salt, then either bbq on a char grill or bake in oven at 180C.
When veggies look good and cooked, layer them in alternate layers with a bit of shaved *not grated* parmesan and any dairy or meat options. A few whole basic leaves in between are wonderful to have poking out the sides.
You can make this dish with whatever is around and be quite flexible.
The secret to tasting good: balance of salt, oil and carbs + good quality organic ingredients.

- Zuccini
- Fennel
- Parmesan
- Celtic Sea Salt
- Fresh chopped herbs esp dill & basil
- Sweet Potato
- Feta / Goats Cheese / bococcini option
- Proscuitto or sausage option
