Char grilled chicken in shrimp paste

I've always wondered what the hell to do with shrimp paste, Luke Nguyen has shown me how. There are only two left because by the time I went to to get my phone to take a shot they were demolished.

Method

combine shrimp paste, lemon juice, sugar, lemongrass, paprika and garlic. Add in the chicken and coat with the oil, leave to sit overnight.
Soak some bamboo skewers in water for at least 30mins before you place the chicken pieces on them, thread them on about 4 or 5 to a stick
head a bbq grill on high and cook for about 3 mins each side

Ingredients

  • 3 x tsp shrimp paste
  • 3 tsp lemon juice
  • 3 tsp sugar - I used palm sugar for this and grated it in off the block
  • finely sliced lemon grass - bash it then slice it up
  • 1 x tsp cayenne pepper
  • 1 x garlic clove chopped
  • 500gm chicken thighs chopped into bite size pieces
  • vegetable oil
