Vietnamese Beef Salad

This is an interpretation of a Luke Nguyen recipe. People will leave it alone until everything else has gone and then realise they should have eaten this first. Vietnamese salads are the best.

Method

if you have a mandolin, this is the time to use is, finely slice the cucumber and carrot and mix with the sugar and set aside
heat oil in a fry pan and add the garlic, cook for a few minutes then add in the beef stir around for about 2 mins max and stir in the cayenne pepper, set aside and let sit in its heat for a few minutes
to make the dressing just mix in all the ingredients and then stir it through the carrot and cucumber mix, add the beef and garnish with the chopped peanuts, I like to dry roast the peanuts in a pan before hand, but you don't have to

Ingredients

  • 2 x small cucumbers
  • 1 x carrot
  • 2 Tblsp palm suger
  • 2 Tblsp rice bran oil
  • 2 garlic cloves peeled and chopped fine
  • 350gm of grass fed beef fillet, sliced into thin strips
  • 1tsp cayenne pepper
  • 1 handful of coriander leaves
  • 1 handful of mint
  • 50gm chopped peanuts
  • Salad dressing
  • 4 Tblsp lemon juice
  • 2 Tblsp castor sugar
  • 1 Tblsp fish sauce
  • 2 garlic cloves finely chopped
  • 1 small chilli chopped
