Celeriac Soup

A thoroughly underrated vegetable, this easy soup is so yummy it will have you realising these things are not Mandrakes from the Harry Potter film.
Method
fry onions in the pan with the oil, add the celeriac with the butter and leave to steam in its own juices for a while - well don't actually leave it, watch it
when it begins to soften throw in the roasted garlic and the potato
add a cup or two of water or vegie stock
bring to boil and simmer till all vegies are soft
throw in the parsley
either mash it up or put it through the blender, depends on how much washing up you feel like
just before you serve it stir through the miso paste, this will bring all the flavour of the celeriac out
Ingredients
- 1 celeriac, roughly peeled and chopped
- bit of butter
- bit of oil
- onion
- 4 cloves garlic roasted in oven for 20 mins
- half cup flat leaf parsley
- 1 large potato peeled and chopped
- any other vegie you have in your fridge
- 1tsp of miso paste
