Baked Trout in Vine Leaves with Walnut stuffing

This is a like vine leaf from the Kebab shop on steroids. The salt goes really well with the fish and you can make any kind of paste for the stuffing. Hard to describe the yum factor.

Method

Place walnuts, most of the oil and the flat leaf parsley with the garlic and turmeric into a blender and make into a paste.
Slice the fish into small pieces about 2 inches thick
place a piece onto a vine leaf and then put a big layer of paste onto the fish before you wrap into a parcel with a few vine leaves
place on a baking tray and bake for about 15 mins at 180, take out and leave to sit for another 5-10 mins
serve with baked beetroot and parsnips

  • 2 large pieces of ocean trout
  • one large clove garlic
  • 1 inch turmeric
  • 150gms walnuts
  • half cup rice bran oil
  • half bunch of flat leaf parsley
  • salt for baking
  • vine leaves washed

OMG, i nearly fell off my chair when i saw this. Yum. I want it NOW
