mushroom, cauliflower and smoked eggplant mash

Not the most amazing looking dish but it tastes spectacular. Topped with some avocado this is another midweek simple and easy healthy living love in.

Method

fry up the onion and garlic till soft, meanwhile place the eggplant on a gas hob straight on there so it starts to burn the skin and smoke through the flesh
cut the cauliflower small and dry fry it with the sliced mushrooms, once they have all gone a bit soft put enough water in the pan to cover for about 5 mins
mix the smoked eggplant through the mix and put it through a blender on high till its a very smooth paste
serve with fresh avocado

Ingredients

  • 1 x small onion chopped finely
  • 2 x cloves garlic, finely sliced
  • 1 x small cauliflower
  • 500gms mushrooms
  • 1 x eggplant smoked over the hob on your stove
  • oil for frying
  • few sprigs of thyme
  • avocado for garnish
