Easy Tuesday Night Snapper and Chips

This ones is super easy and perfect for mid week lazy nights

Method

Turn the oven to 200 degrees.
Place potato on baking tray and drizzle with olive oil, salt and pepper.
Cook until crispy.
Whilst doing that grab some foil, place fish skin side down and add garlic, ginger, eschalot, lemon, fish sauce, soy sauce and honey. Fold and seal and place in the oven.
Fish will only need 10 minutes at the most.
Remove everything and serve the fish in the foil to keep the juices from ruining your chips. Even dunk the chips in the sauce, YUM.

Ingredients

  • 1 x snapper fillet
  • 1 x chopped garlic
  • 1 x knob chopped ginger
  • 1 x chopped eschalot
  • lemon slices
  • Fish sauce
  • Soy Sauce
  • 1 x teaspoon honey
  • 2 x potatoes cut to chip size
  • Olive oil
