Brocoli Soup
Easy, cheap, delicious, fast and next to no calories! I love making lots of this and freezing it for lazy days.
Method
Cut up the celery and leeks and lightly saute in the olive oil for about 5 mins
Cut off the stalks of the brocoli, chop up and add to the saucepan for another 3 -4 mins
Add the vegetable stock to the pot and leave to simmer for 5 mins
Add the heads of the brocoli but only for about 5 mins, don't let it overcook or you'll have browny yellow soup
Remove from heat and blend, I use a baymix directly into the pot but be careful not to go nuts as you'll burn yourself with hot soup flying everywhere
Serve with cracked pepper

- 2 bunches brocoli
- 2 leeks
- 1 stick celery
- 4 cups vegetable stock
- 1 tsp olive oil
- cracked pepper
- blender
- big saucepan for soup
