Beautiful Breakfast Frittata

Working out what to eat for breakfast is always a struggle. Eggs are an excellent protein source for breakfast but don't be afraid to add anything you have laying around your kitchen.
Method
heat the oil and fry the onions till they are soft, add in the mushrooms and the thyme and garlic if you are using it, once the mushrooms have wilted a bit spread everything evenly in the pan and the egg mix over the top. Wait till the bottom has cooked, place the almonds on the top and put under a hot grill for another 2mins or until cooked. Easy quick healthy breakfast ready in less than 10 mins.
Ingredients
- half small spanish onion thinly sliced
- 4 large mushrooms sliced
- splash of olive oil for frying
- 2 eggs, lightly beaten with the milk
- dash of milk
- flaked almonds for the top instead of cheese
- one clove garlic (optional)
- few sprigs fresh thyme or any other herb you have
