Celeriac and Broccoli Soup

Another 20 minute nutrition plus recipe for a weeknight.
Method
fry up the celeriac and thyme in the oil for a few minutes until it sweats, don't be afraid of browning the edges
place some salt over them and add in water, enough to cover, chop the garlic and add into the soup mixture, simmer for about 5-7 minutes then add in the chopped broccoli, cook for a few more minutes then place soup into a blender, serve hot

- one large celeriac peeled and roughly chopped
- one bunch broccoli chopped
- one clove of garlic
- springs thyme
- olive oil for frying
- pinch of salt
