Baby Beet and Orange salad

This is a dashing salad and a liver cleanse all in one.
Method
chop the stems off the beets and wrap them in foil
place them in a very hot oven for about 20mins, then take them out and leave them to sit in the foil to cool until you need them - can be overnight if you want to get this out of the way. once they are cool peel the skin off with your hands, if they are cooked well the skin should just slide off all the way to the tips
skin the orange and make sure there is no white pith as its really bitter, cut it up into nice bite size pieces and place it in the bowl with the beets, the red will make them go a lovely blood orange
heat a pan and roast the seeds for about 3 mins until they start popping, sprinkle over the beets
make a dressing out of the lemon and garlic with a dash of oil and mix it all through
when you want to serve chop the watercress roughly and mix in the salad together

- 2 bunches baby beets
- bunch of watercress
- one big and juice orange
- juice of one lemon
- garlic clove crushed
- tsp cumin seeds
- tsp caraway seeds
- pepper

Agreed, this looks so amazing. Once I get a few hours to clean the kitchen, this will be the first thing I mess it up with.
