Silver Needle White Tea

A delicate fragrant brew.

White tea is unfermented/oxidised and is, therefore essentially, a very fine green tea.

Method

1. Empty kettle.
2. Fill kettle with fresh water.
3. Make some Fish Eyes ie Bring water to 80 degrees
See separate post on estimating water temperature without a thermometer.
4. Pour onto leaves. I use a pinch, but adjust to your taste.
5. Steep for around 5, but up to 10 minutes.
6. Pour and drink.
7. Same leaves will produce a good brew 3 or 4 times, brew slightly longer as they get re-used.

  • The very finest Bai Hao Yinzhen Silver Needle White Tea you can find.
  • Try Jingtea.Com if theres nothing local
  • These are grown in the Fujian Province of China and picked between March 15 and April 10, when it is not raining and only using undamaged and unopened buds.
