Caramelised onion & goats cheese tart

Apart from the caramelising onion time this is one easy recipe and yum for a sunday afternoon snack

Method

Heat oven to 200 degrees

1. take out pastry and let defrost
2. heat oil in a fry pan over medium heat, add onions and sugar and cook for 20-30 minutes until caramelised
3. cut pastry into rectangle (size will depend on how big you want it) and place on baking tray lined with baking paper
4. brush egg wash around edges and cut extra pieces of pastry to run along all sides and place around outer of rectangle
5. bake in hot oven until golden
6. place onions inside and scatter with thyme and goats cheese and devour

Ingredients

  • brown onions x 4, sliced
  • puff pastry (careme is amazing)
  • a few sprigs of thyme
  • 50 g soft goats cheese (i prefer cabridoux)
  • 50ml olive oil
  • 1 teaspoon brown sugar
  • 1 egg for brushing pastry
