anglo american pale ale

America is fucking obsessed with over hopping their craft beer. The quest is on to make the bitterest hoppiest IPA on the planet. Yawn. I enjoy balanced beer where the sweetness of the malt is countered by the bitterness of the hops. This beer is quite hoppy. More so than i would usually make but hey at least i'm 'on trend'. Wankers.

Method

heat 3 us gal water to 160 oF and steep grains for 30 min. remove. Boil. Add liquid malt extract. Stir lots. Boil. Add 1 oz citra hopshops.
Wait 45 minutes.
Add 1oz Citra and 1/2 oz EKG hops
wait 5 mins.
add dried malt and glucose and irish moss. Boil.
wait 5 mins add 1oz Citra and 1/2 oz EKG hops.
Boil 5 mins. Turn off fire.
Chill to room temp.
strain into sterile fermenter add 2 gallons spring water. Pitch yeast in and put airlock on top.
Ferment 8 days.
transfer to secondary fermenter. Add 1oz EKG hops. put airlock on. Wait a week. add priming sugar and bottle in sterile....er...bottles.

Ingredients

  • Steeping grains:
  • 300g Carapils malt
  • 100g carawheat crystal malt
  • 50g Crystal malt 40o
  • 5 gallons water
  • 5lb liquid malt extract
  • 1lb dry malt extract
  • 1lb glucose
  • 3 oz Citra hops
  • 2oz East kent goldings hops
  • 1tsp irish moss
  • 1 vial Cry havoc ale yeast

Fuckadoodle doo this one is damn tasty too. Bastard hoppy, i added citra hops to the secondary instead of egk. Worked a treat, my hippy friends will be in hop heaven. If they can afford a bottle.
