The buying of the fish is half the fun, setting the table for your friends is more enjoyable. Pour champagne in small glasses so no-one knows how much they have consumed.

Method

remove the beast from where ever you are cooling it and bring it to room temp
fill its guts with the herbs, you can put butter in there but you don't need to
cover each side with sliced ginger - slap it all over the sucker
wrap in baking paper, then in foil
you will know when its cooked when you can smell it
as soon as you can smell fish take it out of the oven and serve it up, if its under cooked just cover it back up with foil and put it back in the warm over for no more than 5-6 mins snapper is best soft

Ingredients

  • one mammoth snapper roughly 5kilos
  • a whole load of dill
  • a whole load of flat leaf parsley
  • about 3 inches of finely sliced ginger don't peel
  • a table set for 8
