Morel & quinoa salad

I can't describe how delicious this is. Quinoa and Morels go remarkably well together.

Method

strain the quinoa then place a cup and half of water over it and boil, simmer for about 15 mins and then take off the heat, keep covered for another 15, then remove lid and fluff with a fork
put oil and butter or just oil in a hot pan and fry the garlic and button mushrooms i think they fry better with just oil and end up with a better texture, once they are browned and softened take them out and then fry up some remaining garlic with the morels for about 2 mins then add the white wine and simmer till reduced to a thick sauce
mix all the mushrooms into the sauce and fluff through the quinoa, serve whenever you are hungry

Ingredients

  • 1 cup quinoa, soaked for 20 mins in cold water
  • 1 bunch of morels sliced lengthways and soaked in salty water for 20 mins
  • standard button or flat mushrooms sliced thickly
  • olive oil or butter or both for frying
  • three/four/five whatever you need garlic sliced
  • half cup of white wine, whatever you have around the house
