Perfect Pumpkin Soup

4 ingredient soup, takes about 20 mins.
Method
fry the onion in a bit of oil until soft, throw in the turmeric and ginger, slice them but no need to peel
cook through for about 3 mins on med heat
add the pumpkin and stir through for about 12 mins
then cover with water, bring to boil then simmer for about 20 mins, as soon as the pumpkin is soft turn off the heat and put through a blender until really super fine
serve immediately or keep for the next day
Ingredients
- pumpkin, cubed into even pieces
- onion diced
- 1-2 inches fresh turmeric
- 1-2 inches fresh ginger

Hello, I do peel the pumpkin, as its only cooked for about 20 mins. If I bake pumpkin I don't peel it, and I eat the skins also.
Any kind of pumpkin is good for soup in my books, if you add some sweet potato it makes it just that little bit creamier.

Question - do you peel the pumpkin? I have always done so, but a couple of friends recently both told me they didn't, although they did stick to the pumpkins with softer skins, or else butternut pumpkin.
'Nother question - do you have a prefered type of pumpkin for soup?
