Quick Italian Open Omelette

This is a wonderful one pan quick dish made in less than 10 mins. The basil pesto at the end makes it real fancy!
Method
Whisk eggs with fork, add water, salt, oregano and pepper. Heat oil in cast iron frypan. Add egg mixture, cook for 90 seconds, top with other ingredients, grill until brown. Add last night's homemade basil pesto randomly, and you're done. No folding, no flipping.

- olive oil
- 2 eggs
- 50 mls water
- pinch salt
- ground oregano
- pepper to taste
- 2 tomatoes
- 4 medium mushrooms
- grated cheese
