Simple and Sensational Pasta

This recipe is soooo simple and damn yummy. If I could eat it daily I would. If you're not a Tofu fan leave it out but I dare you to try it (my Dad even liked it!).
Method
Toss tofu in roughly ½ the tamari and set aside
Place about 2tbs olive oil in frying pan and heat slightly, add onion and zucchini, and fry on a medium heat for a few mins
Add garlic, almonds and cook for another 3 - 5 minutes
Add tomato, tofu and olives stirring quickly then add herbs
Add cooked pasta and toss
Add leftover olive oil, salt, pepper, tamari. FEAST!!
Ingredients
- 1 cup pre-cooked tofu (cut into 1cm cubes)
- 1 cup zucchini sliced/diced (whatever)
- ½ cup tomato, seeds removed and diced
- 1 diced small brown onion, finely diced
- 2 cloves garlic, diced
- 1 tbs fresh oregano chopped
- 1 tbs fresh basil chopped
- ¼ cup almonds
- 1/2 cup pitted olives chopped
- 2 tbs tamari
- 3 tbs olive oil
- Packet/bag of pasta cooked (obviously)
- Sea salt and pepper
