Simple and Sensational Pasta

This recipe is soooo simple and damn yummy. If I could eat it daily I would. If you're not a Tofu fan leave it out but I dare you to try it (my Dad even liked it!).

Method

Toss tofu in roughly ½ the tamari and set aside
Place about 2tbs olive oil in frying pan and heat slightly, add onion and zucchini, and fry on a medium heat for a few mins
Add garlic, almonds and cook for another 3 - 5 minutes
Add tomato, tofu and olives stirring quickly then add herbs
Add cooked pasta and toss
Add leftover olive oil, salt, pepper, tamari. FEAST!!

Ingredients

  • 1 cup pre-cooked tofu (cut into 1cm cubes)
  • 1 cup zucchini sliced/diced (whatever)
  • ½ cup tomato, seeds removed and diced
  • 1 diced small brown onion, finely diced
  • 2 cloves garlic, diced
  • 1 tbs fresh oregano chopped
  • 1 tbs fresh basil chopped
  • ¼ cup almonds
  • 1/2 cup pitted olives chopped
  • 2 tbs tamari
  • 3 tbs olive oil
  • Packet/bag of pasta cooked (obviously)
  • Sea salt and pepper
