Soba Salad with Show Stealing Dressing

Hearty fresh soba salad with a power punch dressing via Goop.

Method

Salad //
Slice the beetroot, kumara and parsnips into long dipping sticks like fat chips.
Season, toss lightly in olive oil and bake till golden and crispy in a moderate oven.
Cook green tea soba noodles in boiling water.
Drain and run under cold water.
Allow baked veggies to cool.

On individual plates divide the baby gem lettuce, veggies, thickly sliced avocado, noodles and sprinkle with seaweed, finely chopped red onion and black sesame seeds.

Serve with dressing on the side to dip and combine as desired.

Dressing //
Peel and roughly chop the carrot and shallot.
Pulse in blender till finely chopped with the roughly chopped ginger.
Scrape down the sides, add the miso, vinegar and sesame seed oil and blend together.
While the blender is going, slowly drizzle in the grapeseed oil and the water.

  • Green tea soba noodles
  • Seaweed
  • Avocado
  • Baby gem lettuce heads
  • Black sesame seeds
  • Dressing //
  • 1 large carrot
  • 1 large shallot
  • 2 tablespoons fresh ginger
  • 1 tablespoon sweet white miso
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon roasted sesame seed oil
  • 1/4 cup grapeseed oil
  • 2 tablespoons water
