Flathead Fillets with Almond Couscous

Quick and simple, yummy and healthy, comforting but a little different.

Method

Place flour in mixing bowl with a little salt and pepper and dust each flathead fillet.

Steam vegetables in a steamer or use microwave if you're pressed for time.

Heat oil in non-stick frypan (not too hot). Gently fry fillets in oil and squeeze on half a lemon whilst they are cooking.

Cook until golden brown and cooked through. You should only need to turn once.

While fish is cooking, heat up the water. Once boiling, remove from heat and add the couscous and the butter. Stir through, then add currants, almonds and chopped parsley.

Serve it all up on a plate with a slice of lemon and garnish with parsley.



Ingredients

  • 400 grams flathead fillets.
  • Half cup of flour.
  • 150 grams couscous.
  • 150 ml water.
  • Teaspoon of butter.
  • small handful of currants.
  • small handful of flaked almonds.
  • Coarsely chopped continental parsley.
  • Lemon.
  • Tblspoon vegetable oil.
  • Broccoli or green beans or similar greens.
  • Salt and pepper to taste.
