Enoki Gnocci with Radiccio

Enoki is so cute and radiccio is completely underrated. Combine the two in a sauce you hardly need to cook and throw on top of gnocci, its a 10 min from start to chomp dinner.

Method

boil water with salt
slice shallots and throw in pan with oil
cook for a few minutes, don't have your burner up too high, chuck in the chopped garlic just peel and chop roughly. Once all soft and juicy stir through the parsley.
Turn heat right down and place mushrooms over the top of the vegies.
place the gnocchi in the water when it rises to the top remove and drain
stir in the sauce immediately with the dill, watercress and radiccio
serve straight away with a dollop of sheeps milk yoghurt

Ingredients

  • 100 gm Enoki mushrooms
  • 1 packet of gnocchi
  • 3 cloves garlic
  • as many shallots as you have handy
  • olive oil
  • salt
  • handful organic flat leaf parsley
  • handful fresh watercress
  • handful fresh dill
  • fresh radiccio chopped up
  • yoghurt
