Whole baked snapper stuffed with blood orange

Such an easy mid week fish filling dish. I love it when you all you need to do is turn the oven on, slice a few bits and then wait with a glass of wine.
Method
Ensure the fish is really cleaned well from wherever you buy it, nothing worse than scales in you grub.
slice blood orange and place inside the fish with a handful of dill
rub salt over the fish, cover with a bit of olive oil
bake on 180c for about 20-25 minutes
You'll be able to tell if the fish is cooked by poking it, the bigger the fish the longer in the oven, its no great science it just takes a little practice to know what you like
